My Interview with Clay Ehmke of Fox and Fig
Hi! Welcome to the second post of my interview series. On this post, I am interviewing Clay Ehmke, who works at Fox and Fig, a vegan restaurant in Savannah, Georgia. "When did you realize there was a need for a vegan restaurant in Savannah?"
Clay said he realized there was a need for a vegan restaurant in Savannah when he moved from Austin, Texas four and a half years ago. Austin had lots of yummy vegan restaurants to offer, so when Clay moved to Savannah, (which didn't have any) that's when he realized the city needed a vegan place.
"Who determines the menu, and are you a chef at Fox and Fig?"
Clay said he is not a chef, but he does help with a creative process of writing the menu. He is also the co-owner and the general manager.
"When did Fox and Fig open?"
The restaurant opened in November 2017.
"And since November 2017 have you found more vegan ingredients that you can incorporation your menu?"
Yes! Some of the ingredients include Almond milk cream cheese, acai, yogi berries, and lychee.
"What's a benefit of eating vegan?"
Here are some tips from Clay:
1) Have a a wide variety. Clay said that when he first started eating vegan he was only eating a couple of foods. However, he discovered lots of cool ingredients that expanded his vegan-pallet for the better!
2) Try to eat as close to whole foods as possible. Avoid process foods!
3) Find a local vegan restaurant! It's a great place to start.
